STEP 1: INFUSION

It all starts with our award-winning gin, crafted in small batches using a blend of botanicals such as cardamom, coriander, French lavender, and anise seed. Plus, there is sarsaparilla root (to help balance the other flavors), juniper orris bodily & Syrian rue, two types of orange peel. It's meant for people who take their drinking seriously. The botanicals are then added to neutral grain spirit in macerating tanks, where they will steep, infusing the flavors 18 hours from start to finish.

STEP 2: DISTILLATION

This infusion is then moved to a still and distilled along with some pure water. The macerate is heated by steam jackets, and vapors rise through the column to the condenser. The vapors pass to the condenser, where they are cooled back into a liquid state and condensed as gin distillate.

STEP 3: THE CUT

This is the section where we gingerly remove the first liquid that comes out of a still (these are often called "heads"). At every distillation, the heart of the spirit is gathered and distilled with scrutiny from our experienced still men. After around 7 hours, the tails follow. The heart cut there is at 142 proof.

STEP 4: BLENDING & BOTTLING

That "heart cut" is then poured into a blending tank, where it's married with pure water until the proof (84) is reached. The gin is transferred to the bottling line, filled into bottles, and capped and labeled. Finally, they box up the Aviation American Gin and prep it for shipping.
