Authentic Tropical aging followed by single charcoal filtration to remove most barrel color while maintaining complex flavor & aroma.
This award-winning rum is a rare combination of column still and pot still distillate, aged for three years in American oak bourbon barrels with a #7 char. We then filter the rum with a proprietary charcoal and limestone coral filter. 40% alc./vol, 80 proof.
Naturally smooth, a rare silver sipping rum with subtle spice and wood notes, bright floral overtones, a hint of toasted caramel with a long warm finish.

A Young Italian Embarks on an Adventure

This story began 1875 when Alfredo Francisco Pellas Canessa, a young adventurer from Genoa, Italy, risked everything by leaving behind his family and the comforts of the old continent to travel to the exotic country of Nicaragua.

A Steamboat Route to Unite the Oceans

Initially, he invested in a shorter and safer steam boat route through Nicaragua to transport passengers and goods from the East Coast of the US to the West Coast during the height of the California Gold Rush. The route was a huge success, but when news broke about the construction of the Panama Canal and the U.S. coast-to-coast railroad, Alfredo Francisco knew it was time to set out on a new adventure.

The Flor de Caña Story begins in 1890

In 1890, he found the perfect setting for the Flor de Caña distillery at the base of the San Cristóbal volcano, the tallest and most active volcano in Nicaragua. The fertility of its surrounding lands, the enriched water and the hot volcanic climate proved to be instrumental in forging the rum’s unique and smooth flavor.

Through its 130-year history, the brand, the company and the family have lived through a plane crash, a civil war, nationalizations, hyperinflation, fires, hurricanes, earthquakes and volcanic eruptions.

Taconic distillery's home is the iconic Hudson Valley. Saturated with National Historic landmarks, the area boasts bountiful farms. With a fervor for the rustic outdoors and a strong desire to work the land, the Coughlin family purchased a portion Laured beef Farms, in Stanfordville, NY, in 2010. Renaming it Rolling Hills Farm. The former farm's 113 acres of rolling hills, became the inspiration for Taconic Distillery's entrance to Dutchess County's local agribusiness market.Inspired by a sporting lifestyle, Taconic's team share a love of the outdoors. Together they embrace hunting, fishing, and a general passion for the outdoor life. This lifestyle is imprinted upon all their products. This area is also the number one wine-producing region in the United States, and home to a world class culinary institute. Taconic prides itself on preserving a bourbon whiskey tradition: From George and Martha Washington's home during the American Revolution, to the Great Estates of the Vanderbilt's, Roosevelt's and Rockefeller's, to the hunting preserves and horse farms of today, bourbon whiskey has been savored for generations (Taconic Distillery). To maintain an unadulterated flavor of the whiskey, Taconic never chill filters, and distill their whiskeys below 160 proof to retain the flavors from the grains. It is the flavor of the grains that are transferred through the distilling process as fatty molecules or flavor oils which results in a cloudiness in the whiskey. Those flavors are transferred through the distilling process as fatty molecules (flavor oils). Some distillers will chill filter the fatty molecules and sacrifice a certain amount of flavor for clarity. Taconic uses distinct Coopers Select, Char #3 new oak barrels made by the Independent Stave Company. Their barrels have a unique maturation process; aged in shipping containers. Less is lost to the angel's share, due to the saturation of the air inside the containers. Being exposed to great temperature fluctuations, results in greater movement of spirit in and out of the barrel staves. Aging occurs in cycles, during times of increased temperature such as in the summer, the whiskey expands through the char, through to the untreated wood beneath. While in the wood, the whiskey dissolves various flavorful compounds. When temperatures drop, the liquid contracts and brings out all of the flavors of the wood, producing flavors that complement the body of the whiskey. Taconic Distillery's Rolling Hills Rum is distilled from sugarcane molasses and aged for two years in bourbon barrels. The rum gets its final beauty rest in recently emptied Taconic Distillery's Founder Rye Whiskey barrels, finishing for a few months in them. The sugarcane elixir is then cut to 80 proof with fresh spring water from the Taconic farm.A truly succulent whiskey with rich vanilla and caramel notes.

Pyrat XO Reserve Rum

Pyrat Rum is a brand owned by owned by Patrn Spirits, and was released in 1997. The company is not a distiller, but rather a blender of spirits. Pyrat Rum was previously produced by the Anguilla Rums Company, but is now produced and bottled in Guyana South America, in the Diamond Bottling Plant owned by Demerara Distillers Ltd. (DDL). Pyrat XO Reserve, is a blend of 9 different Rums, sourced from all over the Carribean, primarily consisting of 2-year-old Demerara rum. Demerara rum is produced by DDL, which produces well over 20 million liters of rum a year. Though they have their own label, El Dorado, their rum is also commonly used in blends like Pyrat XO Reserve. The Diamond Bottling Plant -which is owned by DDL- has its own private bottling line within the plant itself. The rum in Pyrat XO Reserve is partly produced in a traditional pot still, and a portion of the blend is produced using Demerara Distillers High Ester Still, which is a John Dore Still. The oldest rum in the Pyrat Rum XO blend is 15-years-old, and all of the XO rum is aged in a combination of American Oak and French Limousine oak casks. Bottled at 40%, ABV Pyrat XO has a stout corked bottle said to resemble the type of bottles used by Caribbean rum runners, ship captains, and pirates in the 19th century. This XO Reserve has a dark amber color. It is sweet on the nose with notes of molasses, toffee, citrus, and spice. The palate is sugary, with signature bright citrus notes of orange liqueur and lemon, and tobacco. The deep flavors of Demerara rum are also present. It has a long finish with hints of ginger and cinnamon.
