Our Sherry Cask Finished Bourbon is inspired by Heather, the wife of our founder, Kaveh Zamanian. Elegant, sweet, and charming, she is the muse behind our brand. A Louisville native, she introduced Kaveh to Bourbon, luring him away from his beloved Scotch and down a rabbit hole he may have never dared alone.

This super-premium Straight Bourbon Whiskey is carefully crafted by taking our fine wheated bourbon aged in alligator char barrels and resting it in handselected Pedro Ximenez Sherry casks from Spain's renown Casknolia Cooperage. The resulting whiskey is an unmistakably balanced expression that blends modern and traditional whiskey making.

Rabbit Hole Distilling, founded by Kaveh Zamanian, produces a beautiful range of award-winning spirits. While their bespoke 24 ft Vendome Copper & Brass still, is being custom-built only a few blocks from their distillery, their Bourbon and Rye whiskeys are 100% Kentucky made, crafted to create a unique drinking experience. This London Dry Gin is part of Rabbit Hole's Fingerprint Edition, a set of limited edition small batch, experimental finishes. Made using gin imported from London this distinctive spirit has uncharacteristically soft juniper notes, overlaying a floral wave of geranium and rosewater. This incredibly gin carries an exclusive distinction: it is the only gin to be finished in #3 Kentucky rye whiskey barrels. The effect is sublime. Layers of white pepper and coriander and the faintest touch of wood leading to a citrus finish, and a nearly irresistible desire to take another sip.

Those are the barrels I harvested for the launch of Founder's Collection and this is the Kentucky rye whiskey that Ive created for my first cask-strength offering," says Zamanian. The release comes in an exquisite gift box with an embossed signature of the founder as well as the bottle number on a ribbon label. Tawny and auburn colors highlight Dareringer’s strong character while fragrances of custard, walnut, sherry, and brown sugar raise expectations. On the palate, it delivers a very smooth pleasing mouthfeel balanced with cinnamon, tobacco, oak, caramel, blackcurrant, lemon and cherry, which culminate to a medium to long clean finish with wine, toffee, and toasted pecans.

Maker Notes

For this limited release, we took an exceptional 15-year-old Kentucky Straight Bourbon and finished it for one year in new French Oak barrels sculpted by the virtuoso artisans of Tonnellerie Leroi, one of France’s most renown cooperages. The exquisite bourbon that has emerged from these barrels is as luxurious in taste as it is in appearance.

Bourbon is the quintessential American Whiskey. A storied spirit whose French roots have been strong since its inception over two centuries ago. This 16-year-old Limited Edition Rabbit Hole Founder’s Collection expression is an homage to bourbon’s French connection. Finished in new French Oak, Nevallier Kentucky Straight Bourbon Whiskey is named for the two forests in France, Nevers and Allier, from which the distinctive wood for the barrels was sourced.

TASTING NOTES
