Founded alongside Danny Polise, Polise and Paladini case distill and age their product in Indiana at MGP using the expert blending and bottling assistance from Castle Rock in Kentucky. This award-winning enterprise currently has two bourbons under their belt, their flagship four-grain straight bourbon, and their barrel strength. This Penelope Straight Bourbon is a blend of 3 bourbon mash bills sourced from MGP Ingredients, Inc. comprised of four grains (Corn, Wheat, Rye, and Malted Barley) non-chill-filtered, the barrels it's rested in have a #4 char while the heads have a #2 char. Penelope Bourbon Toasted Series explores new and unique expressions of our signature four grain straight bourbon whiskey. After full maturation in charred new American oak barrels, we finish Penelope Bourbon in a new, freshly toasted barrel. Each batch is a unique blend of our signature three bourbon mash bills and all have different custom chars & toasts – making each bottle unique and different. The barrels selected for this series are the best our inventory has to offer and go through an extensive hand-selection process.

Architecture is defined as the art or practice of designing and constructing buildings.  Using those same principles, we wanted to build new and distinct flavor profiles the same way an Architect creates new innovative structures.   

 Working in collaboration with Tonnellerie Radoux of France, the market leader in oak barrel manufacturing and innovation, we use French oak staves and their state-of-the-art OakScan process to build a truly precise flavor profile within every bottle.   After all, the best architecture leaves no room for error.

The second release in our Founders Reserve series highlights a collection of 15 year old American Light Whiskey barrels distilled from corn at Seagrams Indiana in 2008. Aged in 2nd fill oak barrels, this amazing spirit brings out savory vanilla notes with a hint of cinnamon and creme brûlée. This 15 year old American Light Whiskey is bottled at cask strength.

Rio is our latest installment in our Cooper Series which takes our straight whiskeys on a world tour, pairing Penelope with unique casks from around the world. Inspired by the joy of Brazil, Rio delights the senses with a double cask finish of American honey and Brazilian oak. The two make perfect dance partners, rich and sweet, with surprising depth.
