Made from the best Mother Earth has to offer: sustainably grown grapes from the Cte-dOr and water from historical French springs. The Pinot Noir and Chardonnay grapes are hand-selected for this unique bottling of vintage gin. The wine is fermented and aged individually in oak barrel for 6 months. After blending the wines together, it is then distilled one time in a copper pot and six times in copper columns, followed by filtration four times.

JCB Gin is infused in a two-step process: Eleven plants and botanicals, including juniper, a touch of roses, and coriander among others are steeped into the spirits, while seperately, a distillation of an additional thirty-three biodynimic herbs, plants and botanicals including chamomile, honeysuckle, dandelion, calendula, borage, valerian, stinging nettle, lemon balm and yarrow is crafted. The Biodynamic herbs in our gin are known to be the best for the human body, and the most incredible contributor to health. December 2017 - Gold, Craft Distillers Spirits Competition

In 1895, Samuele Sebastiani emigrated to the United States from Tuscany. A stonemason by trade, he quarry-mined the hills of Sonoma, California for the cobblestones used to build the streets of San Francisco. For nearly a decade, he worked long hours, lived frugally and saved carefully, and in 1904, Sebastiani purchased enough land in Sonoma to open the doors to Sebastiani Winery. Sebastiani's tireless work ethic quickly made the winery successful, and Sebastiani Winery was the only winery in Sonoma to remain open during Prohibition. Today, August Sebastiani, Samuele's great-grandson, is the President of 35 Maple Street Distillery, the makers of Uncle Val's Botanical Gin. The gin is named after Vaerio Cecchetti, Sebastiani's favorite uncle and a retired physician near Lucca, Italy. "In addition to being a highly regarded doctor, Uncle Val is a great cook and avid gardener," says Sebastiani. The botanicals used in the gin juniper, lemon, sage, lavender and cucumber "are the same as those Uncle Val likes to use in his cooking and grows in his home garden." Awarded an astounding 96 points by The Tasting Panel, Uncle Val's Botanical Gin has a complex yet subtle flavor profile. Sebastiani uses immersion bags (think big tea bags) in order to infuse the gin with the flavors from the botanicals. The immersion bags are steeped in the gin for several hours, although some remain in the gin longer in order to impart a stronger aroma and flavor. The lemon adds a burst of crispy citrus flavor which is balanced by the calming effect of the sage. While the lavender provides for an elegant, refined aroma, the cucumber adds a cooling, subtle freshness. After the gin is distilled five times over, Sebastiani's team filters it using carbon and lava rock (or pumice), which has a porous density that's perfect for filtering gin. After filtration, the gin is brought to proof using naturally sweet spring water from the Cascade Mountains before being bottled and labeled by hand. "Gin was invented in the Netherlands by a doctor, Franciscus Sylvius, who was a professor of medicine in Leyden, Holland, back in the 1650s," Sebastiani says. "He was trying to find a cure-all for kidney and stomach disorders, so he infused juniper berries into distilled spirits. The elixir became so popular that distillers began commercial production and by the end of the 1680s, the Dutch were exporting more than 10 million gallons of gin each year. Gin is the only spirit that started out as a medicine, so it's fitting that we named ours after Uncle Val." 

Founded in 2008 in Golden, Colorado, Golden Moon Distillery, led by Stephen Gould and Karen Knight, creates handcrafted spirits and liqueurs using premium ingredients and traditional methods. They maintain a library of rare distilling books and operate four antique stills to put this knowledge into action. The distillery is eco-conscious, sourcing locally and minimizing waste. It received the Distillery of the Year award in 2019 from the American Distilling Institute and also operates a speakeasy-style cocktail lounge. Their flagship Golden Moon Gin, crafted by Stephen Gould, features locally-sourced botanicals for a unique floral aroma, perfect for sipping or mixing.

Using whey alcohol from the local dairy farmers here in Cork, together with our own natural well water and an interesting mix of foraged and sustainably sourced botanicals, we have hand-crafted a gin that highlights the character of Bertha in her prime.

And what a name!! The mere mention of it raises eyebrows, poses question, taxes the mind and brings a smile to the lips. Hurrah, our work here is nearly done!

Like any good Irish tale, the story behind our wonderful Bertha’s Revenge Gin is a tapestry of good fortune, endeavour and passion. Funnily enough, our gin took about 10 months from conception to birth, not a dissimilar length of time to the average gestation period for a cow!

Brockmans unique recipe of naturally grown aromatic botanicals are steeped in pure grain spirit for many hours to release their natural oils and aromas. The more traditional notes of gin are combined with a refreshing influence of citrus and aromatic wild berries. Bulgarian coriander plays its part, providing an aromatic, gingery orange top note. This blends perfectly with the soft and rounded harmonies of blueberries and blackberries, all of which is supported by the bottom note of Tuscan juniper berries. Dry, bittersweet Valencian orange peel elongates the deeper tones and gives an intensely smooth finish.

Thereafter, Brockmans is slowly distilled in a 100 year old traditional copper still, where we capture the heart of the gin distillation. The distinctive gin notes derived from Brockmans unique recipe deliver an exquisite intensely smooth gin, with a uniquely defining sensual taste experience.

Brockmans is like no other gin. For gin enthusiasts it is a revelation, for gin novices it is about discovering an unexpected individual taste. In 1988, near a scenic stream called Lithia Creek in Ashland, Oregon, Jack Joyce and Bob Woodell, fraternity brothers at the University of Oregon, opened the doors to Rogue Brewery. For fifteen years, Rogue Brewery brewed beers such as Dead Guy Ale, Dad's Little Helper and Brutal IPA under the tutelage of John Maier, Rogue Brewery's brewmaster. Then, with the addition of Master Distiller John Couchot, Rogue Spirits was born. Couchot, who earned a bachelor's degree in chemistry at Evergreen State College in Washington, was a professional chemist for six years before jumping ship to make spirits. Working with a custom-made, 150-gallon Vendome copper-pot still at the Rogue House of Spirits on the banks of the Pacific Ocean, Couchot created Rogue Spruce Gin, the first spruce gin ever made. The gin is crafted using 11 different botanicals: spruce, cucumbers, angelica root, orange peel, coriander, lemon peel, ginger, orris root, grains of paradise, tangerine, juniper berries and champagne yeast.The botanicals, blended together without any chemicals, additives or preservatives, give the gin strong notes of cucumber and a hint of citrus. Rogue Spruce Gin earned the Double Gold Medal at the 2009 San Francisco World Spirits Competition and the Silver Medal at the International Wine & Spirits Competition. Roge Spruce Gin also won the Platinum Medal at the 2012 World Beverage Competition, where it was also named "Best in Show." Much like the name suggests, Rogue Spirits does things differently.

Det Norske Brenneri, or "The Norwegian Distillery" as it is known in English, is situated in the town of Grimstad in the southern part of Norway. This is the first private distillery in Norway since the government dissolved the state monopoly on Spirits-making in 2005. Since then they have been producing various types of spirit including apple brandies, aquavits, gins and whiskies. They utilize traditional techniques and handraft their spirit in small batches. They produce up to 300 liters at a time. This Norweigian distillery only uses local Norwegian berries and herbs, which have a very distinctive flavor profile due to the dynamic climate. Harahorn Gin gets its name from a mountain in Hemsedal, one of the most pristine mountainous areas. The label features the mystical lepus cornutus, a giant rabbit with deer antlers. Distilled from Norwegian potato liquor, the base of this gin is comprised of Rros juniper, Nordmarka blueberries, anise, Oppdal angelica, Grimstad rhubarb, seaweed, wild Sunndal marjoram, and 16 other Norse herbs. Harahorn Gin earned the 2019 USA Spirits Ratings award for the Gin of the Year.

Our Coppers American Gin is transformed by time in our used bourbon barrels to create one of the most distinctive, yet versatile, spirits available anywhere. Tasting Notes

Copper color aged gin at 85 proof. Dry wood atoms hit the nose first, followed by hints of cinnamon and vanilla. This gin draws on the warm climates from which its exceptional ingredients are harvested by hand: Spanish Blood Oranges for a rich sweetness, French Immortal Flowers and Juniper Berries for a cool and clean flavor, and Australian Lemon Myrtle for a fresh, citrus finish. Each ingredient is distilled individually to honor its distinctive flavors.

Brooklyn Gin was created to bring a fresh, vibrant flavor to elevate your favorite cocktail. We use fresh citrus, hand crushed juniper berries and oldschool production techniques for the freshest tasting gin. It takes a little more time and effort, but we believe you can taste the difference in every sip.

In the 1650s, a Dutch doctor named Franciscus Sylvius was searching for a remedy to the kidney and stomach ailments that he often encountered in his practice of internal medicine. At the time, Dr. Sylvius was a Professor of Medicine in Leyden, and he attempted to infuse juniper berries into a spirit distilled from grain in order to create a panacea. The resulting elixir eventually became known as gin, and was so popular that within a few decades, the Dutch were exporting 10 million gallons annually. For the next 250 years, nearly all the gin produced in the world was barrel-aged since the spirit was stored and transported in oak barrels (at the time, glass was too fragile and plastic and stainless steel containers were still not available). In order to craft a more traditional gin, "we've rested our signature vapor basket gin in our charred oak barrels previously used to age our spiced rum," says Darek Bell, the founder and Master Distiller at Corsair Artisan Distillery. Since opening its doors in 2009, Corsair has received numerous accolades and awards, including being named the 2013 Craft Distillery of the Year and 2013 Innovator of the Year by Whisky Magazine. Corsair's Artisan Gin remains one of the few gins produced using a gin-head (otherwise known as a carter head or vapor basket). This method, allows the flavors and essential oils of the gin's sustainably grown botanicals to be gently extracted using vapor; this technique yields a less bitter spirit than maceration resulting in a more aromatic, clean-tasting gin. This gin head style gin is made using 100% organic botanicals, which yields a brighter, more well-balanced spirit. Using a vapor basket essentially highlights the unique mixture of botanicals use in the spirit, such as citrus, cucumber, cardamom and coriander. Among other accolades, this crisp gin has struck Gold at the San Francisco World Spirits Competition, the World Beverage Competition, and the International Review of Spirits Awards BTI.

After Ben Iravani and Josh Rennielaunched their trendy bar in Aberdeen, Scotland in 2009 they decided to experiment with an ideal recipeof botanicals infusions andunique methodsto extract the herbs and spices using a cold vacuum distillation. Together with university professor Andrew Porter they created a special vacuum still, subsequently naming their gin after him. The distillate used for Porter's Gin is sourced from G&L Distillers near Manchester. This gin stays true to the traditional combination of sweetened gin and exotic botanicals while using modern methods to extract more refined sophisticated flavors. The signature juniper base is enhanced by tropical notes of passion fruit, guava and white tea, which are cold distilled to maintain freshness.
