Rogue Spruce Gin

Rogue

750 ml | 45% ABV
Gin

In 1988, near a scenic stream called Lithia Creek in Ashland, Oregon, Jack Joyce and Bob Woodell, fraternity brothers at the University of Oregon, opened the doors to Rogue Brewery. For fifteen years, Rogue Brewery brewed beers such as Dead Guy Ale, Dad's Little Helper and Brutal IPA under the tutelage of John Maier, Rogue Brewery's brewmaster. Then, with the addition of Master Distiller John Couchot, Rogue Spirits was born. Couchot, who earned a bachelor's degree in chemistry at Evergreen State College in Washington, was a professional chemist for six years before jumping ship to make spirits. Working with a custom-made, 150-gallon Vendome copper-pot still at the Rogue House of Spirits on the banks of the Pacific Ocean, Couchot created Rogue Spruce Gin, the first spruce gin ever made. The gin is crafted using 11 different botanicals: spruce, cucumbers, angelica root, orange peel, coriander, lemon peel, ginger, orris root, grains of paradise, tangerine, juniper berries and champagne yeast. The botanicals, blended together without any chemicals, additives or preservatives, give the gin strong notes of cucumber and a hint of citrus. Rogue Spruce Gin earned the Double Gold Medal at the 2009 San Francisco World Spirits Competition and the Silver Medal at the International Wine & Spirits Competition. Roge Spruce Gin also won the Platinum Medal at the 2012 World Beverage Competition, where it was also named "Best in Show." Much like the name suggests, Rogue Spirits does things differently.

Gin

Born in December 1839, William Grant became a cattle herder at the age of 7 in order to supplement his family's income. As a teenager, Grant apprenticed as a cobbler and a clerk, and in 1866, he joined Mortlach Distillery as a bookkeeper. For the next two decades, Grant managed the affairs at the distillery, while secretly learning the art of distillation. In 1886, he resigned from his position as distillery manager and, together with his seven sons, two daughters and one sporadically working stonemason, built his family distillery in Scotland. Over a century later, Charles Gordon, Grant's great-grandson and successor at William Grant & Sons, purchased two unusual and incredibly rare stills at auction a Carter-Head Still (constructed in 1948, there are only a few in the entire world) and a dusty 19th-century Bennett. Although he didnt find a use for these stills initially, more than twenty years later he enlisted the help of master distiller and Gin scientist Lesley Gracie to assist in his quest to create something extraordinary from the stills. Finally, in 1999, Gordon and Gracie found the perfect combination and launched Hendrick's Gin. Hendrick's Gin is made in small batches of 500-liters or less, with both the Bennett and Carter-Head stills working their magic on Hendrick's unique mix of botanicals, which include yarrow, elderflower, juniper, angelica root, orange peel, caraway, coriander, chamomile, cubeb berry, orris root and lemon. After distillation, Hendrick's Gin is infused with Bulgarian Rosa Damascena and specially selected cucumbers an odd combination which produces miraculous results. Hendrick's Midsummer Solstice is a limited edition Gin inspired by the Midsummer Solstice blooms, which gives Hendrick's signature house blend a distinctive floral take. The result is a captivating floral Gin that blooms onto the palate in a harmony of lightness and complexity. An alluring floral twist on Hendrick's hallmark taste. This Gin was created by Master Distiller Lesley Gracie at a place of experimental botanic alchemy at the Hendrick's Gin Palace in Scotland.a place of experimental botanic alchemy at the. As the first expression from her Cabinet of Curiosities collection, this Gin is a tribute to the sensory powers of the Midsummer Solstice, when botanicals are said to be at their most powerful. Inspired by the mysterious and ephemeral delights of floral blooms during the summer solstice.

Mischief Farm Blackberries
We start with a floral and bright gin base (Tod & Vixen’s Dry Gin 1651) and steep blackberries in the finished gin for 24 hours.  The resulting flavor is fresh and bright with a balanced sweetness and a gorgeous natural magenta color.

Red Rooibos Tea
Red Rooibos comes solely from South Africa. The tea has a warm earthy flavor that compliments the pine and citrus flavors in our gin.

Bitter Orange Peel
Bitter oranges, not to be confused with their cousin the Bergamot, are used in preserves and medicinally around the world. We use their peel to compliment the fresh citrus notes and add another dimension to our gin and your cocktails.

Juniper Berries
Juniper is the only essential botanical in all gin. The word gin is derived from the Dutch word for juniper, jenever. While found in most temperate climates, we found the best growing region to be Southern Europe, specifically Macedonia. Juniper gives our gin it’s signature fresh pine and resiny aromas.

Coriander Seed
Coriander is the ripe seed of the cilantro plant. Although coriander and cilantro come from the same plant, they do not share the same flavors. Coriander adds zesty citrus notes to our gin.

Angelica Root
Historically, angelica root was used as a medicinal plant. It is now also used to flavor liquors and food. Angelica has a distinct earthiness that pairs nicely with the juniper and coriander we use in our gin.

Fresh Orange Peel
Sweet, juicy and low in acid, navel oranges are the foundation of our gin’s citrus notes.

Makrut Lime Leaves
Makrut lime leaves are native to tropical Southeast Asia and are frequently used in dishes from the region to balance the flavor of other spices – especially coriander. We use makrut lime leaves for the same purpose.

Orris Root
Orris comes from the root of the iris plant. We use orris not so much for its aromatics as a binding agent to balance and combine the other flavors in our gin.

Aviation Old Tom Gin

Aviation

750 ml | 42% ABV
Gin

A unique and complex gin that is a true delight for any gin enthusiast. This gin is crafted using a blend of botanicals that includes juniper, lavender, cardamom, sarsaparilla, and orange peel, among others. The blend of botanicals is carefully balanced to create a distinctive flavor profile that is both sweet and savory.

This gin is named after the aviation cocktail, a classic cocktail made with gin, lemon juice, and maraschino liqueur. The Aviation Old Tom Gin is a modern take on the classic gin used in the cocktail, and it is made using traditional methods that were popular in the 19th century.

One of the unique aspects of this gin is its use of Old Tom style. This is a sweeter style of gin that was popular in the 18th and 19th centuries. Aviation Old Tom Gin is made using a small amount of sugar, which gives it a subtle sweetness that is balanced by the other botanicals.

When sipped neat, this gin has a smooth and complex flavor profile. The initial taste is sweet and floral, with notes of lavender and citrus. This is followed by a spicy kick from the cardamom and a subtle bitterness from the sarsaparilla. The finish is dry and long-lasting, with a hint of sweetness that lingers on the palate.

This gin is versatile and can be used in a variety of cocktails, including the classic Aviation cocktail. It also pairs well with tonic water, ginger beer, or citrus juices. Aviation Old Tom Gin is an excellent choice for anyone who enjoys a complex and flavorful gin, and it is a must-try for fans of classic cocktails.
