THE LOST ART OF TEQUILA MAKING

CAZCANES WATER
Cazcanes sources natural artesian water for our tequila. The water starts off as rain or snow high up on the pristine peaks of the San Pedro de los Landeros mountains. It slowly travels through natural minerals deep within the volcanic mountains before emerging at the Navichi springs.

NATURAL YEAST FERMENTATION
The ‘piñas’ are then cooked, and crushed to extract and concentrate their flavors.  Next comes fermentation using natural, wild yeast, and then distillation in our alembic stills.

CAZCANES AGAVE
Hand-selected Weber Blue Lowland (Tequila Valley) Agave grown in Volcanic Tufa Soil at 4000-6000 ft is harvested during peak sugar levels to deliver a distinct Cazcanes taste.

Cazcanes Tequila No.7 Reposado is the first Reposado offering from Mr. Collin Edwards, the award-winning Master Distiller of Cazcanes Tequila. Only 600 have been produced. Of which, only 300 have been available in the California market Starting July 2018. This particular blend was aged in heavy charred American oak barrels for 4 months to produce a defined taste and robust body. It also was awarded a Bronze Medal from the 2018 San Francisco World Spirits Competition.

• Don Camilo Extra Anejo Organic Tequila is a unique and rare Organic tequila, only 94 barrels of it are available.
• Aged for at least 8 years in Kentucky Bourbon barrels.
• The quality and taste profile are of the finest quality. Dark brown color, full body, an exceptional bouquet of exotic fruits, vanilla and oak aromas, strong firm taste, with long, yet gentle aftertaste.

• Every detail was carefully considered when crafting this tequila: the finest quality organic agave plants with the highest sugar content, the cold distillation process in order to preserve the best tequila flavors, the specially selected bourbon barrels, the 8 long years of maturation at Fabrica de Tequilas cellars under controlled humidity, and, finally, a single-barrel cask-strength bottling.

Our Blanco has a smooth, crisp and earthy taste that emulates the pure agave plant. There are absolutely no additives used in our production. How is it made? A team of skilled artisans in Mexico who grow the agave the right way, sustainable and organic, and then craft the spirit using traditional techniques. After harvest, the agave is slow roasted in a clay oven, shredded on a roller mill, fermented with a wild natural open air process, distilled twice with well water in stainless steel tanks and copper tanks.

This carefully monitored process results in a clean and flavorful tasting ultra-premium Blanco tequila. Taste layers of flavor from the agave plant; citrus on the front end and vanilla custard creaminess on the back end. Awarded 94 points from Wine Enthusiast Magazine.

Tasting Notes

Nose: A zesty, savory nose and palate that suggest dried herbs, honey and a hint of tomato paste.

Palate: The complex flavor finishes with light almond and agave sweetness, a hint of steely minerality, and a final burst of jalapeo heat.

Finish: Smooth sipper.

Established in 1950 by Don Alfonso Jiménez Rosales, a Herradura co-founder, Caballito Cerrero is among the oldest Tequila brands no longer classified as Tequila under the NOM. Now known as "Destilado de Agave," it uses agave chato, a precursor to blue agave. Run by generations of Tequila experts at Santa Rita Distillery, it's admired by newer Tequila enthusiasts. Found between Herradura and Cielo Abierto, Caballito Cerrero embraces tradition while aiming for future innovation.

Made as Nature and Time Intended from the Finest Highlands Agave

Cierto Tequila represents thousands of years of biological and cultural evolution. It is nature’s ritual in a glass –no additives, no artificial ingredients, no shortcuts. Our Master Distillers, Enrique Fonseca and Sergio Mendoza, are fourth- and fifth-generation agaveros, whose family has grown agave since the 1800s. Like fine winemakers who farm the land themselves, their growers' lens and deep knowledge of agave make for the best tasting Tequila. The truth is right here in Jalisco. 

Cierto is made with fully mature, estate-grown agave from the Atotonilco Highlands, where the ancient red clay soil coaxes its roots to grow deeper and absorb its complex minerality. Enrique and Sergio personally tend to each orchard, harvesting plant-by-plant only when they recognize it has reached its potential, at the Maduro and Pinto stages. At La Tequileña distillery in the town of Tequila, agave is hand-cut and slowly cooked in low pressure ovens to yield the juice that forms Cierto's base. Inspired by Scotch whisky-making, we distill twice, in copper pots and column stills, to showcase the natural character of the terroir and agave.

Cierto is made with pure water filtered through ancient volcanic springs at the Volcán de Tequila. Only natural ingredients are used: water, yeast and agave. Nothing artificial is ever added to Cierto. It takes time to perfect a great Tequila. Our aged tequilas are gently matured in French Limousin oak casks which previously held fine wine, cognac and Armagnac – persuading the agave’s delicate essence to emerge.

Each blend includes rare tequilas from the Fonseca family’s private tequila library, a vast collection spanning a variety of cellar characteristics.

Tequila Ocho Reposado Barrel Select Widow Jane 2022 undergoes a meticulous production process that starts with hand-harvested blue Weber agave grown in the Jalisco Highlands. The agave is carefully cooked and crushed to extract its flavorful juices, which are then fermented and distilled to create a high-quality tequila.

Following distillation, the tequila is aged in carefully selected oak barrels. This particular expression benefits from the expertise of Widow Jane, known for their unique aging techniques and selection of exceptional barrels. The aging process allows the tequila to develop its characteristic flavor profile and acquire the desirable attributes associated with a reposado tequila.

Cambio is on a mission to create a higher standard in premium tequila by exploring small quality changes throughout the spirit's creation.

We approached our Tequila Blanco with a higher set of standards, going beyond traditional expectations every step of the way. First, our whole Blue Weber Agave piñas are roasted slow and low for superior flavors, then the rich juice is extracted from the pulp using only a traditional Tahona stone wheel. Our slower fermentation process utilizes extremely low temperatures and wine yeasts in American white oak and Mexican pine lined fermentation tanks—a step few others have ever even considered. Finally, our tequila spends time in used French oak wine barrels, giving the finished spirit a level of complexity and character unlike any other Blanco.

TASTING NOTES

Fruity and rich with notes of butterscotch, honey-roasted agave, orange peel, guava and peach with a slight mineral undertone. Soft and pleasant on the palate with a clean lingering finish—even at 46% ABV

Don Ramon Lavender Infused Silver Tequila combines the vibrant essence of silver tequila with the aromatic sophistication of lavender. Crafted with meticulous care, it offers a floral and slightly herbal profile, making it a unique choice for cocktails or sipping neat. The infusion process ensures a delicate balance where the tequila's smoothness harmonizes with lavender's distinctive notes, creating a refreshing and memorable drinking experience.

Gran Patrón Burdeos is crafted in very limited quantities from the finest 100% Weber Blue Agave grown in the Highlands of Jalisco. Twice distilled and aged in used American and new French oak barrels, it is then finished in vintage Bordeaux wine barrels, which impart a dark amber color and a taste that´s velvety smooth with hints of vanilla and raisins.

Maker Notes

To become our Gran Reserva,  our 100% blue agave Silver is aged in new French oak barrels. This gives our premium extra añejo a full-bodied taste that critics have compared to an aged cognac or Armagnac. To fully appreciate the experience, we recommend serving Gran Reserva in a snifter rather than a shot glass.

TASTING NOTES

At first, you are pleasantly surprised by the sweet, delicate, honey-like opening nose; the honey component expands to include vanilla, buttercream and toffee, yielding to a smooth caramel finish.

Arete was a famous horse that won the gold medal in the 1948 London Olympics in Equestrian Jumping. Ridden by General Humberto Mariles, together they became the only double gold medal winners in this discipline.
