Hudson Maple Cask Rye Whiskey

For nearly 220 years, the Tuthilltown Gristmill located off Albany Post Road in Gardiner, New York used waterpower to mill local grains into flour. In 2001, Ralph Erenzo acquired the property and, together with a partner, converted one of the mill's granaries into a distillery. At the time, Erenzo had little experience distilling spirits. After purchasing a furnace from eBay and a German pot still without instructions, he distilled his first batch of vodka using apple scraps from a nearby orchard in the Hudson Valley. Following the distillation of apples, Erenzo began experimenting with the distillation of whiskey. "Our first aged spirit was an experiment that turned out quite well indeed," he says. "And since we are a small batch shop, we can change direction overnight. We also realized early that whiskey was coming back, in particular the interest in straightforward aged spirits; people are just tired of the same old thing. And we copied no one." Hudson Maple Cask Rye Whiskey is a limited-edition rye whiskey distilled from locally-sourced New York rye. Once the grains have been harvested, they are milled and mashed at the distillery before being twice distilled through a copper pot-still. Following distillation, the rye is aged in charred American oak casks for under four years. The walls of the warehouse in which the casks are laid to rest are lined with heaters that are powered by water from the distillery's stills. As a result, when the stills are running, the warehouse becomes incredibly warm, causing the oak casks to expand and interact with the whiskey. Each night, when the stills are dormant and the temperature cooler, bass speakers, which have been placed throughout the warehouse, play very deep bass music. The bass vibrates the barrels, agitating the whiskey and creating micro-expansions and contractions in the barrels themselves. This sonic aging process unique in the industry adds to the interaction of the wood and whiskey and results in a more robust flavor profile. After its initial beauty rest in American oak casks, the rye whiskey is double-barreled, or finished, in maple syrup-cured whiskey barrels from a local Hudson Valley partner. This finishing process contributes rounded notes of maple syrup to the whiskey, and complements its notes of black tea, vanilla, rye toast and vanilla cream. "We're not making whiskey the 'traditional' way, as defined for 80 years by the big whiskey producers," says Erenzo. "We are making it the way their grandfathers made it. We do all the work, hands-on, from scratch. All of our product is hand-made."

Situated along the banks of the East River in the Brooklyn Navy Yard, Kings County Distillery is New York City's oldest operating whiskey distillery and the first distillery in New York City since Prohibition. There, the distillery's founders Colin Spoelman and David Haskell hand-craft moonshine and chocolate whiskey. A typewriter that Spoelman and Haskell found on a sidewalk in Williamsburg is used to make the labels that adorn their clear, flask-shaped bottles, while a hairdryer (made by Revlon) is used to afix each bottle seal. Handwritten scrawls on a chalkboard keep track of different batches, and mesh laundry bags are used as strainers. Kings County Chocolate Whiskey is made by steeping Kings County Moonshine in artisan cacao husks sourced from the Mast Brothers Chocolate Factory in Brooklyn. The chocolate and moonshine rest together for just over a month, giving the moonshine a deep mahogany color and an aroma of dark chocolate. "It's good for someone who either likes whiskey or chocolate which includes most people, I guess," says Spoelman. "There's not a whole lot else like it out there." The initial flavors of sweet corn are nicely balanced by the subtle notes of rich, bitter chocolate and give way to a smooth and slightly sweet finish. "We make enough to supply some of Brooklyn, some of Manhattan and that's about it," Spoelman says. After visiting their distillery, we bamboozled them into sharing some of their juice with the rest of the country.

Koval Single Barrel Millet Whiskey

Koval started its life as a craft distillery, founded in Chicago in 2008, as the first distillery in Chicago's city limits since Prohibition. Founders Robert and Sonat Birnecker left their professional lives in academia to found Koval. They have been crafting certified organic whiskeys, brandies, liqueurs and specialty spirits from scratch, ever since. Being the first distillery within city limits since the mid-1800s, Koval brings Austrian distilling traditions to America. Koval is named after founder Sonat's great-grandfather, who earned Koval the nickname Koval, when, at the very early age of 17 he emigrated from Vienna to Chicago at the start of the 1900s, to start a business. Robert was bequeathed a treasure trove of distilling knowledge and expertise from his grandfather, Robert Schimd. "Being a craft distiller allows us to be flexible and bring a new approach to the market," says Sonat Birnecker, the founder of Koval Distillery. "Craft can be different. Different in business model. Different in product. Craft is a way to be creative." Together with her husband, Robert, Birnecker founded Koval Distillery Chicago's first distillery since Prohibition in 2008. Koval Distillery, which is situated just a few feet away from Hollywood Beach in Chicago's North End, boasts a custom-made, 2,000 gallon, Kothe Destillationstechnik copper-pot still imported from Germany. "I come from a family that's been distilling for over a hundred years in Austria," explains Robert, who has been distilling spirits himself since he was a child. "My grandfather had a distillery in Austria and I would help him to make different eau de vies and brandies when I was growing up. He taught me the importance of having the right equipment and using fresh, organic ingredients. Koval distillery is a grain-to-bottle operation, sourcing their grains from a local organic farmer collective in the Midwest. The grain is milled and mashed on-site, and the resultant liquid is distilled, with only the heart cut making it into the bottle. All enzymes and yeast used in production are non-GMO, and the water is sourced from Lake Michigan, purified using a natural charcoal method. All Koval spirits are bottled and packaged on-site. Millet is a prized grain in Asia and Africa. It is also a very popular base for spirits in Nepal. This Koval Single Barrel whiskey however, is the first whiskey to be made out of the grain. With notes of nut and vanilla to define the palate, this organic whiskey has a clean and bright finish.

Treaty Oak Distillery is named after the famous 500-year old tree in Austin, under which Stephen F. Austin signed agreements defining the borders of Texas.Their ginsare called Waterloo, after the original name of Austin. They moved to Dripping Springs, a place with a rich history of gatherings and shared perspectives. All of their Char 3 barrels are sourced from Kelvin Cooperage in Louisville, Kentucky. One of the defining points of their process is that they toast the barrel before they char creating a better caramelization of the oak. Central Texas has a very different climate than Kentucky and other areas producing bourbon. The wide swings of temperature and humidity allow for a maturation that is specific to the weather of the hill country.Their non climate controlled rickhouse was designed to showcase the dynamic climate. Red Handed is thoughtfully curated from Heaven Hill Distillery in Bardstown, Kentucky. Aged 2 years, this beautiful straight bourbon presents a pleasant honey nose with kettle corn and cool earthy notes leading into a mild spice with waves of caramel and butter. This bourbon can be enjoyed neat or mixed into a classic cocktail.

Tasting Notes

Appearance: Worn leather​

Nose: Incredibly fruity, the nose opens with strawberry salt-water taffy, Bing cherry, and raspberry but more exotic fruits lurk in the depths: prickly pear, lychee, blood orange, grapefruit marmalade, damson plum, even tomato. The fruits nearly overpower subtle herbaceous notes of pizzelle, Maraschino liqueur, Cynar, and pipe tobacco. Its sweetness is kept in check by a hint of paraffin and scorched earth.​

Palate: As fruity as the nose, exhibiting strawberry and rose jam, lychee, Maraschino liqueur, and calvados, balanced by très leches cake, hibiscus, and angelica.

Finish: The theme continues on slowly evolving fruit: guava, watermelon, Pink Lady apples; they’re joined by a touch of paraffin from the nose and a spicy signature of candied chili pepper.

With a splash of spring water: Those nose grows beguilingly perfumed, notes of apple blossom, hyacinth, applewood smoke and mulled cider released from the overbearing fruitiness, which has developed a more tropical character in the form of pineapple, mango and papaya. The palate becomes fuller and brighter, notes of mango and peach nectar overlay fresh ginger. Almond milk and white chocolate on the finish are given lift by spearmint.

The winner also came as a surprise, as it comprised 45% rye, 30% wheat, and 25% barley.
