The initial nose reveals fresh red fruits with a touch of brioche. The first sensation is reminiscent of biting into a perfectly ripe Morello cherry, bursting with full and mature aromas. Powerful, yet remarkably subtle with an extraordinarily long-lasting finish.

P2 is Dom Perignon's higher end Champagne; a premium wine. The P2's have undergone much longer lees aging than their vintage equivalents, which results in additional freshness and complexity. P2 is shorthand for 'second plenitude', reflecting the house philosophy that Champagne experiences three different but equally wonderful stages in aging, captured in three different Dom Perignon releases: the 'regular' vintage wines, which have been aged on the lees for 7-8 years before disgorgement; the P2 wines which see 12-14 years on the lees; and finally the even rarer P3 wines, which undergo more than 20 years lees aging. In Carta Nevada Brut, Freixenet plays up a playful, fruit-forward style. Considered an easy introduction to Spanish cava, it is a terrific first taste for those who have not yet had the pleasure of enjoying a lively, effervescent glass of bubbly.

Vinification
Freixenet produces its sparkling wines in the traditional méthode champenoise, aging Carta Nevada Brut for nine months in the 'cavas,' the caves from which they take their name. Embracing double fermentation, the second fermentation takes place in the bottle as the wine ages on the lees. Through the process, Freixenet sets the stage for a generous mousse and continuous stream of fine bubbles upon opening.

Palate
Carta Nevada Brut has dosage, or residual sugar level, of 1.5%. Its fresh, fruity flavor is pleasant and slightly sweet, although still within the technical range of the brut category. This wine's refreshing, light taste leads from a full, ripe peach, apricot fruit and vanilla nose, encouraging big, round, soft flavors in the mouth, with an appealing finish. Perfect for brunch, it is also an excellent choice when mixing champagne cocktails.

Vinification
Harvested by hand, the selection of ripening grapes in Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm weather Macabeu grapes, through the beginning of October for the higher elevation Parellada variety, our winemaker awaits the perfect time to gather each bunch, letting the vines tell him when they are ready. The first fermentation is nurtured in stainless steel tanks at controlled temperatures between 57°- 60°F. Exclusively initiated from our own Freixenet cultures, the first fermentation is introduced into the tanks. After 10 to 12 days, the wine is racked and clarified as the blend is readied for bottling. The secondary fermentation finds the bottles of Cordon Negro cradled in the perfectly chilled caves for up to 18 months.

Palate
Cordon Negro Brut is a crisp, clean and well-balanced 'cava' sparkling wine. The fresh palate of apple, ripe pear and bright citrus flavors combine with a long finish and an exciting touch of ginger.
