Discover a Journey of taste with our new three-part collection - Lambay Single Malt - Reserve Cask Series.  Batch 01 is the first bottling to be released and is limited to just 10,000 bottles. Batch 02 and Batch 03 will follow in the coming years.

Batch 01 is a rich triple-distilled single malt, matured in bourbon barrels and finished in signature Camus cognac casks. Before bottling, the island’s Trinity Well water is added, to deliver this delicious single malt whiskey.

Lambay Single Malt is wholly finished in hand-selected French oak cognac casks.
Craft is key with our Lambay Single Malt as our selected casks are placed on Lambay Island to mature. This brings unique maritime notes of sea salt and iodine to these casks exposed to the fresh sea air.
Batch 01 contains a higher percentage of island matured Lambay Single Malt delivering a more intense salty note on the palette.
This Single Malt consists of both first fill and second fill cognac cask finishing to deliver a more intense mouthfeel of spice, tobacco, and pepper on the palette.
Blended with Single Malt from our Island warehouse, the whiskey has soft smoky attributes with slight salinity and a dry lingering finish that balances the rich oak and herb note.

Hand selected casks of Carribean Demerara Rum have been used to finish the Tullamore D.E.W Original and thus create the Tullamore D.E.W Carribean Rum Cask Finish. Flavours of tropical fruit and warm spices dominate the palate.

Tullamore Dew Cider Cask Irish Whiskey Tasting Notes

Nose: Fresh leafiness with a hint of crisp green apple and sweet maltiness.

Palate: Light bodied with a sweet, fruity vibrancy, that is soft and mellow with a lovely balance of oak, creamy malt and sweet, fresh apple notes.

The fighting 69th has long celebrated its Irish heritage, and in this tradition, we bring you their first Irish Whiskey. In the 19th century, Irish whiskey was the most popular spirit in the world, and today, it is the fastest growing whiskey category in the world. This fine whiskey is a tribute to the Irish-American spirit and a perfect tribute to America’s own Irish Brigade!

We use only the finest high quality distilling grains. Our mash bill consists of the finest barley and malted barley, which gives Irish whiskey its unique and distinctive character. We use a variety of mash bills and complete the minimum 3 year aging process in bourbon casks. We then create a variety of distillates using unique secondary cask finishing.

Our whiskey is triple-distilled in handmade copper pot stills, uniquely designed for maximum vapor and copper interaction. Our Fighting 69th Irish whiskey is a unique and superb blend of three distinct distillates, which undergo separate finishing processes. We then choose which finishes, in the right proportions, create the optimal blend.

All of our whiskies are matured in once used bourbon casks for a minimum of 3 years. We then secondarily finish our whiskies in a variety of other casks, including Single-Char casks, Double-Char casks, Oloroso Sherry casks, Rum casks, and Port casks. This uniquely finished blend results in a fine distillate that is both of robust character and a full smooth finish, a fitting tribute to the Fighting 69th Regiment!

Buckle up. Bushmills Single Malt Whiskey 16 year old is is truly one of the great whiskeys of the world. Aged for about 15 years in a combination of Oloroso Sherry and bourbon-seasoned casks, and then finished for about 9 months in port wine pipes (large barrels unique to making port wine.) This single malt shows its layers of flavor, juicy fruits, nuts and spice, as well as a hint of ruby redness. It’s best enjoyed neat. Okay, maybe one small cube of ice to open it up.

TASTING NOTES

Aged for a minimum of 16 years in a combination of Oloroso Sherry and Bourbon seasoned casks, then finished for several months in Port Wine barrels, BUSHMILLS 16 Year Old is a unique maturation which imparts distinct notes of juicy fruits, nuts and spice, as well as a hint of ruby redness.

The Irishman Founder's Reserve is an exceptional blend of 70% single malt whiskey and 30% single pot still whiskey, crafted with precision and expertise. Following a triple distillation process, this Irish whiskey is matured in bourbon casks, resulting in a delightful flavor profile.

On the nose, the Irishman Founder's Reserve entices with notes of Peach Campino sweeties, reminiscent of the popular strawberry and cream candies. Alongside, there are hints of crisp apples and a gentle touch of white pepper, adding a subtle spice to the aroma.

The palate offers a rich and luxurious experience, with a delightful mouth-feel that envelops the senses. The flavors of ripe fruits take the spotlight, accompanied by luscious vanilla and a touch of cinnamon, creating a harmonious blend of sweetness and spice.

The finish of the Irishman Founder's Reserve is remarkably long, leaving a lasting impression on the palate. Its well-rounded and finely balanced character showcases the craftsmanship behind this exceptional whiskey, allowing the flavors to linger and evolve gracefully.

Blue Spot’s name was derived from the Mitchell’s practice of marking their maturing casks of whiskey with a mark or daub of coloured paint to determine the age potential of the whiskey. Blue Spot was a 7 year old whiskey, Green Spot (10 year old), Yellow Spot (12 Year Old) and Red Spot (15 year old). As a colourful history would have it, this revered Blue Spot remained underground until now and its introduction reunites the historical Spot Family for the first time in over 56 years.

Tasting Notes

Nose: A light mix of pineapple, kiwi, green banana and lime zest followed by Pot Still spices, baked apple, hazelnut and toasted wood.

Taste: A smooth mouthfeel with a subtle mix of fruit, a hint of clove oil and cracked black pepper corns. Sweet spices, vanilla and cinnamon add to the wood's nutty contribution.

Finish: Blue Spot Blue Spot Embodying the unmistakable qualities of Single Pot Still Irish Whiskey. Blue Spot is matured for no less than 7 years in Bourbon casks, Sherry butts and Portuguese Madeira casks all bottled at cask strength for you to enjoy! A 17 Year Old Single Malt that was aged in ex-Bourbon barrels for the first 15 years before being transferred into a rare Japanese Mizunara cask for the final two years. It's predecessor the Glendalough 13 Year Old Mizunara Finish was named in the top 20 whiskeys in the world. Very aromatic and complex on the palate with notes of honeycomb, creamy vanilla and cedarwood spice.

Redbreast is a single pot still whiskey, for which a combination of malted and un-malted barley are triple distilled in copper pot stills. The brand was created by W.A. Gilbey & Co, and bottled using whiskey sourced from Jameson's Bow Street distillery in Dublin. When Jameson amalgamated with Powers and Cork Distillers to form the Irish Distillers group, the Dublin distilleries were closed down, with all production moved to New Midleton distillery in Cork in 1975. Gilbey's discontinued the brand ten years later, but agreed to sell it to Irish Distillers who relaunched it in 1991.

Jack Ryan Single Malt with an abv of 46% is an authentic Irish Whiskey that sets you up for a delicious mouthful of silky, honey sweetness with a long, warm- hearted, lingering, spicy finish.

TASTING NOTES

Nose: Intense tropical fruit aromas of passionfruit, pineapple, lemon and orange peel with a touch on cinnamon and ginger.

Palate: Smooth and oily textured. Even at the full 46% it is soft and easy to drink. Flavours of fresh pineapple, lemon, oranges, marmalade and ginger snap with some honey and oak.

Finish: Becomes more malty and biscuity with the oak flavours also shining through.

Color: Bright gold in colour.

Kilbeggan Single Pot Still is a glorious tribute to the town and those who kept its whiskey alive, proudly wearing the colour of County Westmeath on its label. It is the second limited release whiskey to be 100% distilled and matured at Ireland’s oldest licensed distillery, and the oldest expression to be released since distillation resumed at Kilbeggan in 2010. Double distilled, once through the oldest working whiskey pot still in the world, Kilbeggan Single Pot Still is a unique mash of malted barley, raw barley, and 2.5% oats that was inspired by historical recipes from the distillery’s heyday in the late-1800s.

TASTING NOTES

NOSE: Initial fresh crisp aroma followed by apple, pear and melon. Jasmine and hazelnut notes combine with an almost honeycomb sweetness.

TASTE: Spice becomes apparent but not overbearing with summer fruits and citrus. Warming mid palate with a fresh mint leaf flavour leading on to a rich creamy mouthfeel.

FINISH: Initially soft, mellow and smooth with a creamy finish. Lingering spice and a dryness as the oat influence becomes evident.

IMPERIAL STOUT CASK FINISH

Freshly disgorged Whistler 7 year old Single Malt casks were filled with our award winning Boyne Brewhouse Imperial Stout, imparting our stouts wonderful rich flavours into the wood. We then refill these seasoned casks with our blend of Irish Malt and Single Grain whiskeys which bestow deeper notes of roasted coffee and cacao nibs.
