The sourced whiskey was first aged for 8 years in first-fill Bourbon barrels before spending an additional 2 years in oak Oloroso sherry casks. Complex, rich, and smooth, it's bottled at 92 proof without chill filtration or added coloring. 

IMPERIAL STOUT CASK FINISH

Freshly disgorged Whistler 7 year old Single Malt casks were filled with our award winning Boyne Brewhouse Imperial Stout, imparting our stouts wonderful rich flavours into the wood. We then refill these seasoned casks with our blend of Irish Malt and Single Grain whiskeys which bestow deeper notes of roasted coffee and cacao nibs.

NOSE: Dark berries mixed with a hint of bitter coffee and creamy cocoa.

PALATE: The creaminess from the cocoa follows through, pairing beautifully with the subtle coffee tones. This is rounded out by hints of caramel.

FINISH: Long, lingering with a creamy mouthfeel.

The Whistler 5 Year Old Bodega Cask Single Malt is a triple distilled whiskey that has been wholly matured in the finest Spanish Sherry Butts for its whole life. These butts were sourced from our partners in the famed Bodegas of Jerez de la Frontera.

TASTING NOTES

NOSE: Stewed dark fruits, leather, chocolate and tobacco on the fore with citrus peel and caramel undertones.

PALATE: Oily mouthfeel with leather, spices, dried figs and sultanas, coupled with bitter chocolate and dry citrus peel.

FINISH: A long, lingering, dry mouthfeel with dried fruits and maltiness remaining.

The Whistler P.X. I Love You Single Malt is a fantastic example of the decadence of the Pedro Ximénez sherry and the influence this fortified wine’s casks can have on excellent single malt Irish whiskey. Finished for at least 9 months in PX casks this single malt exudes delicious sherry influence. 100% malted barley, initially matured in ex-bourbon casks before being finished in ex-PX Sherry Casks for 9 months.

TASTING NOTES

NOSE: Fantastically delicious sherry nose. Dried berries, raisins, cherries and sultanas/ golden raisins, with candied orange and sticky brown/ demerara sugar.

PALATE: Wood forward opening, with an incredibly viscous yet crisp palate. The dried fruits and brown sugar from the nose are joined on the palate by walnut, zesty citrus and a hint of leather.

FINISH: Walnut, dried fruits and the subtle wood prickle remain for a lengthy dry finish with a subtle hint of dark chocolate.
