Age: Making mezcal is an art. Each lot of Ilegal Mezcal Añejo is aged to taste for 13 months, using a combination of new and used American oak, medium char barrels. Our barrels are sourced from Kelvin Cooperage, a family-run business since 1963.

The nose is sweet roasted agave with baked apple and a subtle oak and earthiness. There’s a smooth texture on the palate, complemented by peppery heat, with layered notes of honey, dark chocolate, and figs. Roasted, sweet agave lingers on the finish, with a silky heat carrying the fading hints of vanilla and dark chocolate.

Ilegal Caribbean Cask Finish is aged to taste for 4 months, then finished in Caribbean rum barrels for 2 months. Caramelized pear and orange on the nose, butterscotch and a light wisp of smoke on the palate. Hints of nutmeg, clove, and cinnamon. Espadín agave from start to finish.
