History of Eagle Rare Bourbon
Eagle Rare Bourbon was originally a 101-proof, ten-year-old Kentucky straight bourbon whiskey introduced in 1975 by master distiller Charles L. Beam. It was one of the last new bourbon brands before the rise of small-batch bourbons.

Over the years, several companies have produced and marked Eagle Rare, including the old prentice distillery in Frankfort, KY. In March 1889, the Sazerac Company, based in New Orleans and owner of multiple distillers, acquired Eagle Rare from Seagram. At that time, Sazerac's Kentucky Distillery was known as George T. Stagg Distillery, now called Buffalo Trace Distillery.

The Original 101-proof, ten-year-old version of Eagle Rare was discontinued in 2005.

Craftmanship and Production

1. Ingredients
Eagle Rare is made from a mash bill that includes a blend of corn, rye, and malted barley. The extract proportions are proprietary, but high-quality grains are essential for developing the bourbon's rich flavor profile.

2. Mashing and Fermentation
In the mashing process, the grains are mixed with water and heated, converting the starched into fermentable sugars. This mash is then transferred to fermentation tanks, where yeast is added. The yeast ferments the sugar, producing alcohol and a range of flavor compounds. This fermentation is essential for developing the bourbon's depth and complexity.

3. Distillation
Following fermentation, the liquid is distilled in copper stills. Distillation separates the alcohol from other components in the mash, resulting in a raw spirit known as White Dog. This spirit is then aged to develop its flavor. For this process, copper still helps remove unwanted sulfur compounds, contributing to cleaner, more refined final products.

4. Aging Process
Wagle Rare is aged in new charred oak barrels for a minimum of ten years. This aging process is critical, as the bourbon extracts flavors from the charred wood, including vanilla, caramel, and deep rich color. The aging environment, including temperature and humidity, also affects the flavor profile, which each barrel offers a unique taste experience.

5. Single Barrel Selection and Bottling
Unlike blended bourbons, Eagle Rare often features a single-barrel selection. Each barrel is chosen for its distinct characteristics, ensuring every bottle offers a unique taste. After aging, the bourbon is filtered and bottled, maintaining rigorous quality standards to deliver its signature smoothness and complexity.
