This 12 year-old Rye Whiskey is a marriage of whiskeys that have been finished in Madeira, Sauternes, and Port casks. Old World is a result of a 4 year long innovation experiment that included creating and examining dozens of unique finishes, blending, and input from over 500 bartenders. The result is a whiskey that takes the elements that are most quintessential in an American rye - boldness and character - and fuses them with the elegance and grace of an 18 year old Scotch.

60 ml Bulleit Rye Whiskey
5 ml Amaro Averna
7 ml St. Elizabeth's Allspice Dram
2 dashes DeGroffs Pimento Bitters
Star anise, for garnish

Add all ingredients except garnish into a shaker. Shake and strain into a chilled cocktail glas.Garnish with star anise.

George Dickel Rye Whisky is the only rye finished in the style that made George famous. We start with the finest rye whisky available, made from 95% rye and 5% malted barley. Then we finish it in the Dickel way chilled, then charcoal mellowed for bright, spicy flavors with the smoothest, finest finish around.

Enjoy the following cocktail recipe

2 lemon wedges
2 oz (60 ml) George Dickel Rye
7 ml Cynar
20g kumquat syrup

First, use a brůlée torch to char the lemons. You can use a cast-iron skillet at home to char either side of the lemon. Once they are charred, remove them with a pair of tongs and let cool for a moment.
Once cool, muddle 2 charred lemons with all the ingredients in a shaker. Shake and double strain into a coupe. Enjoy.

Signature Rye Whiskey: Sagamore Spirit Rye Whiskey is a blend of two straight rye mash bills, aged 4 to 6 years in high-char American oak barrels. The first is a high-rye, which adds notes of cinnamon and clove, and the second, a low-rye, contributes notes of caramel, honey, and citrus peel. The final spirit is proofed with limestone-filtered water from our spring house built in 1909 and represents our team's thoughtful approach to crafting a classic Maryland-style rye whiskey.

Cask Strength Rye Whiskey: Our Cask Strength Rye Whiskey is a blend of straight high-rye and low-rye mash bills aged 4 to 7 years. The 7-year-old contributes deeper chocolate, hazelnut, and molasses characteristics and the 4-year-old adds bright citrus notes and balanced spice. After our distillers select and blend these straight rye whiskies, they add just a touch of limestone-filtered water from our spring house built in 1909. Cask Strength is complex and perfectly layered, showcasing the transformational art of blending.

PALATE: Smooth dark chocolate paired with intense notes of black pepper and brown sugar. A light hit of honey for balance.

When we decided to release a rye, we knew it had to be something special to live up to the amazing response received by our bourbon finished in port barrels. Angel’s Envy Rye Finished in Rum Barrels is genuinely unique and worthy of Master Distiller Lincoln Henderson’s legacy. The taste profile of rye whiskey was a perfect fit for a rum cask finish. After sampling over 100 rums to find the right flavor to complement rye whiskey, the team’s decision was unanimous.

Angel’s Envy spends up to 18 months finishing in Caribbean rum casks, resulting in an immensely complex whiskey. The mingling of raw, spicy and earthy rye with the mellow sweetness of rum finishing creates an incomparably smooth and drinkable whiskey, even at 100 proof.

How to Enjoy
Great neat, with a little water, or on the rocks. The high rye mash bill also makes Rendezvous Rye perfect in one of the classic cocktails made with rye, like a Manhattan, an Old Fashioned, or a Sazerac.

One of our oldest whiskeys ever bottled is also the first WhistlePig product finished in Vermont Estate Oak. Harvested right off our farm the wood has more rings than the standard American oak used in whiskey barrels. That gives it more opportunity to impart deeper flavors during maturation. Hitting the bottle at 92-proof, the liquid is assertive and wise beyond its 15 year age statement. And it boasts a score of 97 points from Wine Enthusiast. So we’re clearly not the only ones enamored by this pure expression of Green Mountain goodness.
